Butternut Squash Puff is a creamy, rich and flavourful side dish that is perfect for the holidays! Made with roasted butternut squash, cream cheese and simple spices.


Units Scale
  • 1 large butternut squash
  • 1/2 cup cream cheese
  • 2 tbsp brown sugar
  • 1 egg
  • 1/8 tsp ground ginger
  • 1/4 tsp salt
  • fresh ground pepper to taste
  • 1 cup dry bread crumbs (divided in half)
  • 2 tbsp melted butter


Making the Butternut Squash Puree:

  1. Preheat your oven to 350 degrees F.
  2. Cut a butternut squash in half and scrape out the seeds.
  3. Place the squash halves on a baking sheet, cut side up. Put about 1 tbsp water into the centres of each squash half.
  4. Roast for for about 45 minutes or until the squash is fork tender.
  5. When the squash is done, scoop out the soft squash.
  6. Use a blender (I like to use a hand blender) to puree the squash.

Making the Butternut Squash Puff:

  1. Using a mixer combine the butternut squash puree, cream cheese, brown sugar, egg, ginger, salt, pepper and 1/2 cup of the bread crumbs. Mix well.
  2. Add the mixture to a 1 L baking dish.
  3. In a separate small bowl mix together the melted butter and remaining 1/2 cup of bread crumbs.
  4. Sprinkle the bread crumb mixture onto the squash mixture.
  5. Bake for 30-35 minutes, or until golden brown.
