Valentine’s Day Thumbprint Cookies
These Valentine’s Day Thumbprint Cookies are so cute and delicious! With a brown sugar shortbread base and red jelly hearts, these are perfect for love day! You might want to double the batch! ❤️

- 1/2 cup unsalted butter
- 1/4 cup packed brown sugar
- 1 egg yolk
- 1/2 tsp vanilla
- 1 cup all purpose flour
- 1/4 tsp salt
- raspberry jelly
- Preheat your oven to 350 degrees F.
- Using a stand mixer, cream together the butter and sugar until light and fluffy (I use the whisk attachment for this part). Make sure to scrape the sides of the bowl.
- Add the egg yolk and vanilla. Mix well.
- In a separate bowl whisk together the flour and salt.
- On your mixer, switch out the whisk attachment for the paddle attachment.
- Add the flour mixture to the butter/sugar mixture and combine.
- Line a cookie sheet with parchment paper.
- Roll the dough into 1 inch balls and place the cookie dough balls on the baking sheet about 2 inches apart.
- Bake for 5 minutes.
- Then remove from the oven and make a heart shape. See notes above for tips!
- Using a small teaspoon add about a 1/4 to 1/2 a tsp of jelly to fill each side of the heart the indent. See notes above for tips!
- Bake for about 12 – 15 minutes more. The edges of the cookie should be lightly golden.
- Cool cookies on a wire rack.
