This Shaved Brussels Sprout Salad is dressed in a Creamy Sweet Dijon Dressing. It’s crunchy, creamy, tangy and sweet all at the same time.

Ingredients

Creamy Dressing:

  • 1/4 cup olive oil
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 tbsp brown sugar, honey or maple syrup
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper

Brussels Sprout Salad:

  • 1 lb Brussels sprouts, shaved or shredded (about 4 cups shaved)
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1 tbsp shelled sunflower seeds

Instructions

  1. In a jar or measuring cup mix together all of the dressing ingredients. Mix well. I like to use a hand blender to do this part, it makes the dressing really nice and creamy. Set aside.
  2. Clean and trim the ends off the Brussels sprouts. Sometimes I will peel off the outer leaves of the sprouts if they’re a little browned.
  3. Shave the sprouts. You can either finely cut them with a knife, or use a mandolin or food processor.
  4. Add the shaved sprouts, dried cranberries, pumpkin seeds and sunflower seeds to a salad serving bowl. 
  5. Add the dressing and mix well.
