Line a baking sheet with parchment paper. Set aside.
Using a stand mixer cream the butter and sugars together until smooth, making sure to scrape the sides of the bowl as you go. (I just use the paddle attachment to mix)
Add the egg and vanilla and mix.
In a separate bowl whisk together the oats, flour, salt, baking powder and baking soda.
Then add the dry ingredients to the wet ingredients and combine.
Stir in the chocolate chips.
Shape the cookie dough into about 1 inch balls. Add 8 cookie dough balls at a time to a baking sheet. Lightly press down.
Bake for 10 – 12 minutes, until the edges are lightly golden brown.
