Oatmeal Chocolate Chip Cookies

These Oatmeal Chocolate Chip Cookies are a classic! Crispy on the outside, soft and chewy on the inside. Great for snacks and lunch boxes.

Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup quick oats
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Line a baking sheet with parchment paper. Set aside.
  3. Using a stand mixer cream the butter and sugars together until smooth, making sure to scrape the sides of the bowl as you go. (I just use the paddle attachment to mix)
  4. Add the egg and vanilla and mix.
  5. In a separate bowl whisk together the oats, flour, salt, baking powder and baking soda.
  6. Then add the dry ingredients to the wet ingredients and combine.
  7. Stir in the chocolate chips.
  8. Shape the cookie dough into about 1 inch balls. Add 8 cookie dough balls at a time to a baking sheet. Lightly press down.
  9. Bake for 10 – 12 minutes, until the edges are lightly golden brown.
  10. Let cool on a wire rack.
