Pear Baked Oatmeal

Make this Pear Baked Oatmeal the night before, and pop it in the oven first thing in the morning! You’ll have a hearty, healthy and delicious breakfast!

Ingredients

  • 3 large eggs
  • 1 1/2 cups milk (2% or whole milk)
  • 1/4 cup vegetable oil (or canola oil)
  • 1 tsp vanilla extract
  • 3 cups old fashioned rolled oats
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tsp ground ginger
  • 3/4 cup homemade pear sauce (or make a quick sauce – see tip above)

Instructions

  1. Whisk together the eggs, oil, milk and vanilla.
  2. Stir in the pear sauce.
  3. In a separate bowl, whisk together the oats, sugar, baking powder, cinnamon, ground ginger and salt.
  4. Combine egg mixture and oat mixture.
  5. Pour into an 8 X 8 baking dish. Then cover and refrigerate overnight.
  6. In the morning, put the dish, uncovered, into a cold oven and bake at 350 degrees for 40 – 45 minutes.
