Peanut Butter Cookie Bars

These Peanut Butter Cookie Bars cookie bars are sweet, soft, chewy and mega peanut buttery!


Units Scale
  • 1/2 cup butter (at room temperature)
  • 3/4 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 cup quick cooking oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup peanut butter chips


  1. Preheat your oven to 350 degrees F.
  2. Line a 9 x 9 square baking pan with parchment paper. Set aside.
  3. Using a stand mixer cream together the butter, peanut butter, and sugars until light and fluffy.
  4. Beat in the egg and vanilla.
  5. In a separate large bowl whisk together the flour, oats, baking soda and salt.
  6. Add the dry ingredients to the butter mixture and combine.
  7. Stir in the peanut butter chips.
  8. Spread the cookie dough into the baking pan, making sure it is smooth and level.
  9. Bake for 30 – 35 minutes, or until the centre looks set. See notes.
  10. Cool on a wire rack before cutting.


I wanted our bars to be slightly chewy, so they are a little under done. I baked mine for 30 minutes.
