These Peach Oat Bars are delicious! With a flavourful peach filling, oat crust and cinnamon oat topping, these taste like a peach crumble, but in a bar.

Ingredients

Units Scale

Peach Filling:

  • 4 cups chopped peaches (peel first)
  • 1/4 cup sugar
  • 1 tbsp water
  • generous squeeze of fresh lemon juice

Oat Bar:

  • 1 1/4 cups all purpose flour
  • 1 1/4 cups quick oats
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup butter, melted

Cinnamon Sugar Topping:

  • 1/8 tsp ground cinnamon
  • 2 tsp granulated sugar

Instructions

Getting Ready:

  1. Preheat the oven to 350 degrees F.
  2. Line the bottom and up the sides of a 9 x 9 inch baking pan with parchment paper. Set aside

Peach Filling:

  1. In a saucepan or skillet add the chopped peaches, sugar and water and lemon juice.
  2. Simmer on low-medium heat for about 10 minutes. You want the peaches soft, yet still chunky.
  3. Set aside to cool slightly.

Oat Bar:

  1. In a large mixing bowl combine the flour, oats, sugar and salt.
  2. Stir in the melted butter. Mix until combined.
  3. Measure out 1/2 cup of the oat mixture and set it aside for later (this is part is the topping).
  4. Add the remaining oat mixture to the prepared baking pan. Press the mixture firmly and evenly into the bottom the pan.

Putting it all together:

  1. Spread the cooked peaches evenly over the bottom oat crust.
  2. Sprinkle the 1/2 cup of oat mixture that was set aside, over the top of the peaches. You can sprinkle it evenly or randomly over the top.
  3. Sprinkle the top with cinnamon and sugar.
  4. Bake for 1 hour, until the top is golden and the peaches are bubbling.
  5. Let cool for at least 2 hours before cutting!
