These Ricotta Oat Bran Pancakes are a healthy and delicious pancake recipe! Soft, hearty and so flavourful.


Units Scale
  • 1 cup flour
  • 3/4 cup oat bran
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup ricotta cheese
  • 1 cup milk
  • 1 tsp vanilla
  • 1/4 cup canola or vegetable oil


  1. Whisk together the flour, oat bran, sugar, baking powder, soda and salt.
  2. In a separate bowl whisk the eggs, ricotta cheese, milk, vanilla and oil until smooth.
  3. Add the dry ingredients to the wet ingredients, and stir until just blended.
  4. Scoop about 1/4 cup batter per pancake, onto a low-medium heat preheated griddle.
  5. Cook each pancake about 2-3 minutes on one side, until you see the bubbles popping, then flip.
  6. Enjoy!
