In a small bowl mix together the oats, flour, pecans, brown sugar, cinnamon, salt and melted butter.
Now it’s time to prep the apples.
Cut each apple vertically in half through the core.
Using a knife or spoon, scoop out the centre.
Use a knife to slice off the stem area, and core area. I do this by making small triangle cuts in each end to cut them out.
Place the cut and cored apples into a baking dish.
Spoon the oat mixture evenly between the 8 apple halves, putting it in the centre of each apple. Don’t worry if it spills out a little into the baking dish.
Drizzle each filled apple with a little maple syrup.
Add 1 cup of water to the bottom of the baking dish. I start off with 1 cup then add more if needed (check half way through baking), add about 1/4 cup more at a time. You don’t want it too watery at the end…the consistency should be sort of like a sauce.
Bake for about 1 hour, or until the apples are tender and soft.
