Maple Cinnamon Baked Apples with Oats

- 4 apples cut in half and cored (see tips above)
- 1/2 cup oats
- 2 tbsp flour
- 2 tbsp chopped pecans
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/8 tsp salt
- 2 tbsp melted butter
- maple syrup
- 1 cup water
- Preheat your oven to 350 degrees F.
- In a small bowl mix together the oats, flour, pecans, brown sugar, cinnamon, salt and melted butter.
- Now it’s time to prep the apples.
- Cut each apple vertically in half through the core.
- Using a knife or spoon, scoop out the centre.
- Use a knife to slice off the stem area, and core area. I do this by making small triangle cuts in each end to cut them out.
- Place the cut and cored apples into a baking dish.
- Spoon the oat mixture evenly between the 8 apple halves, putting it in the centre of each apple. Don’t worry if it spills out a little into the baking dish.
- Drizzle each filled apple with a little maple syrup.
- Add 1 cup of water to the bottom of the baking dish. I start off with 1 cup then add more if needed (check half way through baking), add about 1/4 cup more at a time. You don’t want it too watery at the end…the consistency should be sort of like a sauce.
- Bake for about 1 hour, or until the apples are tender and soft.
- Drizzle with more maple syrup and serve!
