  • 1 turkey carcass, broken into pieces
  • 1 large onion, coarsely chopped or sliced
  • 23 carrots, peeled and coarsely chopped)
  • 23 celery stalks, coarsely chopped
  • 2 garlic cloves, cut in half
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 2 tsp black peppercorns


  1. To a large stock pot add the turkey bones, and cover completely with cold water. Make sure the water level is at least 1 inch from the top of the lip of the pot.
  2. Bring to a low boil, reduce heat to low, then simmer gently for about 30 minutes.
  3. After the 30 minutes, add the chopped vegetables and spices.
  4. Simmer uncovered on low, for about 3 hours, adding water to top up as needed. It should be a gentle simmer.
  5. After 3 hours strain the broth into a large bowl.
