In a small bowl mix together the oil, vinegar and seasoning.
Prepare the vegetables by cutting them into chunks or slices, then add them to a large bowl.
Toss the veggies in the marinade and if possible, let marinate for at least 30 minutes (this gives them a real flavour boost).
Place the marinated vegetables in a single layer on the hot grill, and roast for 5 minutes, then using a pair of tongs flip and cook for another 5 – 10 minutes, or until they are cooked the way you like them. If you like a smoky char, cook the vegetables a little longer, just make sure to watch them closely.
