These Gingerbread Pancakes are soft, fluffy and SO flavourful! With festive gingerbread flavour, these are perfect for holiday brunch!

Ingredients
- 3 cups flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 2 tsp ground ginger
- 2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 3 eggs
- 3 cups buttermilk
- 1/3 cup molasses
- 3 tbsp melted butter
- 1/4 cup brown sugar
- 1/4 tsp vanilla
Instructions
- In a bowl whisk together the flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg and salt.
- In a separate bowl whisk together the eggs, buttermilk, molasses, melted butter, brown sugar, and vanilla.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Cook on a medium-high heat griddle, about 2-3 minutes each side, or until you see the bubbles popping in the pancakes.
- Sprinkle with icing sugar, a bit of brown sugar and drizzle with syrup.
