This 3 ingredient Poached Rhubarb is easy to make and is ready in minutes! Delicious over vanilla ice cream, cake, pancakes, pavlova and more. A great way to use up fresh rhubarb.

Ingredients

Units Scale
  • 4 cups sliced rhubarb (about 6 medium stalks)
  • 2 cups water
  • 4/3 cup granulated sugar

Instructions

  1. In a large saucepan over low-medium heat, add the sugar and water. Stir and bring to a light boil to dissolve the sugar.
  2. Add the chopped rhubarb and simmer for about 10 – 12 minutes, until the rhubarb is soft.
  3. Remove from heat and let cool.
