Easy Meatball Subs

a top down view of a meatball sub, and small bowls of ingredients

Units Scale
  • 20 frozen COOKED meatballs (homemade or store bought)
  • 1650 mL jar pasta sauce (about 2 1/2 cups)
  • 5 submarine buns
  • 2 cups shredded mozzarella cheese
  • 1200 g Bocconcini ball (1 container)
  • 1/4 cup Parmesan cheese
  • 1 bunch fresh basil leaves
  • black pepper

  1. In a large skillet over low-medium heat, add the frozen cooked meatballs and jar of pasta sauce. (see tips above if you’re not using frozen meatballs)
  2. Simmer for 20 minutes, or until the meatballs are warmed through and the sauce is hot.
  3. In the mean time shred the mozzarella cheese and slice the bocconcini.
  4. Use a serrated knife to slice the buns horizontally, being careful not to cut the buns all the way through, you want to create a pocket for the meatballs.
  5. Add 4 saucy meatballs to each bun, and smother them in extra sauce.
  6. Generously sprinkle on shredded mozzarella.
  7. Add slices of bocconcini.
  8. Sprinkle with Parmesan.
  9. Place the subs on a baking tray to toast in the oven.
  10. Broil for 2-3 minutes or until cheese is melted.
  11. Add fresh basil leaves, extra sauce if you like, season with pepper, and enjoy!
