Ingredients

Lemon Mousse:

  • 2 cups of heavy whipping cream (500 mL)
  • 8 oz cream cheese, at room temperature
  • 1 tsp vanilla extract
  • 1 lemon plus the juice
  • zest from 2 lemons
  • 1/2 cup granulated sugar

Garnish:

  • fresh fruit or berries: blueberries, strawberries, raspberries, kiwi
  • or add lemon slices to each dish
  • fresh mint leaves look nice too

Instructions

  1. Using a stand mixer with the whisk attachment, whip the heavy cream until medium-stiff peaks form. Transfer to a clean bowl and set aside.
  2. With the mixer (you can even use the same mixing bowl you used for the whipped cream) cream together the cream cheese, vanilla, sugar, lemon zest and lemon juice until smooth.
  3. Then gently fold the whipping cream into the lemon mixture and stir until combined.
  4. Transfer to pretty serving cups and garnish with fresh berries and lemon zest.
  5. Enjoy!
