Easy Egg Bites

These Easy Egg Bites are a delicious way to start the day! Make them in different flavour combinations for everyone. A great recipe to freeze for grab-and-go breakfast.

Egg Bites:

  • 10 eggs
  • 2 tbsp milk
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 3/4 cup grated cheese

Optional Ingredients:

  • green onions
  • chopped tomatoes
  • chopped mushrooms
  • chopped Swiss chard or spinach
  • chopped bell peppers
  • chopped cooked ham
  • chopped cooked potatoes
  • chopped asparagus
  • chopped broccoli

Instructions

  1. Set your oven to 350 degrees F.
  2. Prepare a muffin pan by spraying the cups lightly with oil. Set aside.
  3. In a bowl whisk together the eggs, milk, salt and pepper.
  4. Stir in the cheese.
  5. Pour the egg mixture into the prepared muffin cups, dividing it evenly between the 12 cups.
  6. Now add what ever additions you want in the egg cups. You can make them all different if you like! I add about 1 tablespoon of ingredients to each cup.
  7. Bake for 25-30 minutes. It may take longer depending on how many optional ingredients you have added.
  8. Serve immediately.
  9. Or let cool and freeze for later (see tips above).
