This Easy Creamy Potato Hamburger Soup is simple and delicious! Have this hearty soup on your table in less than 1 hour.

  • 6 slices bacon, chopped
  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 large stick of celery, diced
  • 4 large potatoes, diced into 1/4 inch pieces
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp dried basil
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups whole milk
  • 2 cups grated cheddar cheese


  1. In a large pot (I use a large soup pot) over medium heat cook the bacon. Then remove from the pan and drain the grease (you can keep a tablespoon or two to use later). When the bacon is cool enough, chop it up. Set aside.
  2. To the same pot add the ground beef and cook until it is fully cooked, then use a slotted spoon to transfer the beef to a bowl and set aside.
  3. In the same pot, keep the drippings, and add the onion, garlic, carrots, celery and diced potatoes. If there are not enough drippings, add 2 tbsp of vegetable or olive oil (or any bacon grease you set aside). 
  4. Sauté until the onions are soft but not browned, making sure to stir up all the delicious browned bits from the bottom of the pan. Once these ingredients are cooked, if there is excess fat drain it off.
  5. Add the seasonings: salt, pepper, and dried basil. Stir and cook for about 2 minutes.
  6. Add the flour, stir and cook for about 2 minutes.
  7. Stir in the chicken broth.
  8. Simmer over a low boil on low-medium heat until the soup thickens and the potatoes are cooked (they should be fork tender), about 20 minutes. Make sure to stir often so the soup doesn’t stick to the bottom of the pot.
  9. Add the cooked chopped bacon and cooked ground beef.
  10. Stir in the milk and simmer on low heat for 10 – 15 minutes.
  11. Add the shredded cheese, stir until the cheese is melted. 
  12. Serve and enjoy!
