Apple Oat Pancakes

  • 1 1/2 cups whole wheat flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 2 tbsp vegetable oil
  • 2 tbsp brown sugar (packed)
  • 1 tsp vanilla
  • 2 medium apples (granny smith and macintosh seem to have the most flavour)

Peach Raspberry Oat Pancakes

  • 1 1/2 cups whole wheat flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 2 tbsp vegetable oil
  • 2 tbsp brown sugar (packed)
  • 1 tsp vanilla
  • 1 peach
  • 1/2 cup raspberries

Banana Oat Pancakes

  • 1 1/2 cups whole wheat flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 2 tbsp vegetable oil
  • 2 tbsp brown sugar (packed)
  • 1 tsp vanilla
  • 1 banana

Instructions

Apple Oat Pancakes

  1. Combine flour, oats, baking powder, baking soda, salt and cinnamon.
  2. In a separate bowl, beat together eggs. Add buttermilk, oil, sugar and vanilla.
  3. Add the milk mix to the flour mix, and gently combine.
  4. Grate the apples (you don’t have to peel them). Then fold them into the batter.
  5. Let batter rest for at least 15 minutes before cooking.
  6. Cook on a preheated medium to high heat griddle.

Peach Raspberry Oat Pancakes

  1. Combine flour, oats, baking powder, baking soda, salt and cinnamon.
  2. In a separate bowl, beat together eggs. Add buttermilk, oil, sugar and vanilla.
  3. Add the milk mix to the flour mix, and gently combine.
  4. Chop the peach into very small chunks.
  5. Mix the peaches and raspberries together, then fold them into the batter.
  6. Let batter rest for at least 15 minutes before cooking.
  7. Cook on a preheated medium to high heat griddle.

Banana Oat Pancakes
