This Creamy Cucumber Salad is creamy, light, fresh, tangy, dill-y and delicious! It makes a perfect side dish with grilled or roasted meats. Ready in 15 minutes.

Ingredients

Creamy Dill Dressing:

  • 6 tbsp sour cream
  • 1/4 cup mayonnaise
  • 1 tsp white vinegar
  • 1/2 tsp granulated sugar
  • 1/4 tsp salt
  • 1/8 tsp fresh ground black pepper
  • 1 tbsp chopped fresh dill leaves

Cucumber Salad:

  • 2 large cucumbers, sliced thinly
  • 2 tbsp sliced shallots or red onion
  • 1 tbsp chopped fresh dill

Instructions

  1. Make the dressing first. Whisk together the sour cream, mayonnaise, vinegar, sugar, salt, pepper and fresh dill. I like to use a hand blender to do this part as it makes the dressing nice and creamy.
  2. Now slice the cucumbers thinly (see pictures), about 1/8 inch thick.
  3. Slice the shallots/red onion thinly.
  4. Chop more dill, about 1 extra tablespoon.

Putting the salad together:

  1. In a medium bowl toss the dressing with the sliced cucumbers, onion and additional fresh dill.
  2. Serve immediately.
