Cranberry Orange Loaf with Orange Glaze

Cranberry Orange Loaf
- 1/4 cup butter
- 1 cup white sugar
- 1 egg
- 1/2 tsp vanilla
- zest from 1 orange (about 1 tbsp)
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup orange juice
- 1 1/2 cups fresh whole cranberries
Orange Glaze
- 1/2 cup icing (confectioners sugar)
- 1 tbsp orange juice
- 1/4 – 1/2 tsp orange zest
Cranberry Orange Loaf
- Preheat your oven to 350 degrees.
- Line a loaf pan with parchment paper. Set aside.
- In a bowl cream together the butter and sugar until smooth.
- Add the egg and mix well.
- Add the vanilla and orange zest, mix well. Set aside.
- In a separate bowl whisk together the flour, baking powder, baking soda and salt.
- Now it’s time to add the flour mix and the orange juice to the butter/sugar mix. To do this, alternate between adding the flour and the juice to the sugar mix. Mix well.
- Stir in the fresh cranberries.
- Pour the batter into your prepared loaf pan.
- Bake for 1 hour, or until a toothpick inserted into the centre of the loaf comes out clean.
- Let your loaf rest in the tin for about 15 minutes before you add the glaze.
Orange Glaze
- Mix together the icing (confectioners) sugar and orange juice.
- Add the orange zest.
- When the loaf is slightly cooled, remove it from the pan and drizzle on the glaze.
- Allow the loaf to rest and cool for at least 1 hour before cutting into slices.
