This Cranberry Orange Loaf is a delicious and festive holiday bread!  Serve with a sweet Orange Glaze drizzle.  Perfect for brunch, snacking or dessert!

Cranberry Orange Loaf

  • 1/4 cup butter
  • 1 cup white sugar
  • 1 egg
  • 1/2 tsp vanilla
  • zest from 1 orange (about 1 tbsp)
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup orange juice
  • 1 1/2 cups fresh whole cranberries

Orange Glaze

  • 1/2 cup icing (confectioners sugar)
  • 1 tbsp orange juice
  • 1/41/2 tsp orange zest

Instructions

Cranberry Orange Loaf

  1. Preheat your oven to 350 degrees.
  2. Line a loaf pan with parchment paper.  Set aside.
  3. In a bowl cream together the butter and sugar until smooth.
  4. Add the egg and mix well.
  5. Add the vanilla and orange zest, mix well.  Set aside.
  6. In a separate bowl whisk together the flour, baking powder, baking soda and salt.
  7. Now it’s time to add the flour mix and the orange juice to the butter/sugar mix.  To do this, alternate between adding the flour and the juice to the sugar mix.  Mix well.
  8. Stir in the fresh cranberries.
  9. Pour the batter into your prepared loaf pan.
  10. Bake for 1 hour, or until a toothpick inserted into the centre of the loaf comes out clean.
  11. Let your loaf rest in the tin for about 15 minutes before you add the glaze.

Orange Glaze

  1. Mix together the icing (confectioners) sugar and orange juice.
  2. Add the orange zest.
  3. When the loaf is slightly cooled, remove it from the pan and drizzle on the glaze.
  4. Allow the loaf to rest and cool for at least 1 hour before cutting into slices.
  5. Enjoy!
