Chocolate Cookie Ice Cream Sandwiches

These Double Chocolate Chocolate Chip Cookie Ice Cream Sandwiches are such a fun summer treat. Make a batch of homemade cookies and fill them with ice cream, then let the kids decorate!

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups chocolate chips
  • Smarties for decorating (or what ever candy you like)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Cream together butter and sugars.
  3. Add eggs one at a time. Mix.
  4. Add vanilla.
  5. In a separate bowl, sift together flour, cocoa powder, salt and baking soda.
  6. Add the dry ingredients to the wet ingredients, and combine.
  7. Stir in the chocolate chips.
  8. Drop a heaping 2 tbsp mound of cookie batter onto the cookie sheet and bake for ~ 15 minutes. Watch carefully. They are best when still a bit soft and chewy.
  9. Cool the cookies completely before making them into ice cream sandwiches.
  10. Scoop about 1/3 cup ice cream between 2 cookies.
  11. Decorate edges with Smarties (or what ever candy you like)
  12. Freeze.
