The addition of butter, cream and fresh green onion to mashed potatoes makes this Traditional Irish Champ Recipe a delicious side dish. A nice change from regular mashed potatoes.

Ingredients

  • 6 medium potatoes (peeled and cut into chunks)
  • 1/4 cup butter
  • 1/2 cup half and half cream
  • 1 bunch of chopped green onions or scallions
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper (or white pepper)

Instructions

  1. Place the peeled and chopped potatoes into a large pot filled with enough salted water to just cover the potatoes. Boil until tender.
  2. When the potatoes are done drain the water, then use a potato masher to mash them. Set aside.
  3. In a small saucepan on low heat, melt the butter then whisk in the cream.
  4. Stir in the chopped scallions.
  5. Add the hot milk mixture, salt and pepper to the mashed potatoes, mix well.
  6. Garnish the top of the champ with extra sliced scallions if you wish.
  7. Serve immediately. You can offer extra butter at serving time too.
