Make the dough for this Cranberry Orange Bread in your bread machine! Let the bread machine do all the mixing and kneading, then shape the dough into a loaf and bake it in your oven. This bread is loaded with cranberries, raisins, orange zest and nuts. Delicious.

Ingredients

Units Scale
  • 1 cup milk (2% or whole milk)
  • 1 large egg, beaten
  • 2 tbsp soft butter
  • 3/4 tsp salt
  • 3 cups all purpose flour
  • 3 tbsp granulated sugar
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 2 1/2 tsp bread machine yeast
  • zest from 1 orange
  • 1/3 cup dried cranberries
  • 2 tbsp minced fresh cranberries
  • 1/3 cup raisins
  • 1/3 cup chopped pecans or walnuts

Instructions

  1. Put all of the ingredients, except the zest, cranberries, raisins and nuts, into the bread machine in the order listed above.
  2. While you wait for the ‘Fruit and Nut’ signal, prepare the additions: chop the cranberries and nuts, zest the orange…

Baking the loaf in the bread machine:

  1. If you are baking the bread right in the bread machine choose the ‘Sweet Bread’ setting.
  2. Then add the raisins and fruit at the ‘Fruit and Nut’ signal.
  3. Let it bake!

Making dough, then baking in your oven:

  1. If you wish to bake the bread in your oven, choose the ‘Dough’ setting.
  2. If you have a ‘Fruit and Nut’ signal in the dough cycle add the zest, cranberries, raisins and nuts.
  3. But, if you don’t have a ‘Fruit and Nut’ signal, you can knead them in after. So once the bread dough is ready, remove it from the bread machine, and on a lightly floured surface, knead in the raisins and fruit.
  4. Shape the dough into a large ball.
  5. Place the ball of dough on parchment paper lined baking sheet.
  6. Now let the dough rise before baking. To do this, turn on your oven for 1 minute at 200 degrees F, then immediately shut it off.
  7. Then place the dough in the oven and let it rise until it doubles in size (about 1 hour).
  8. After this time, remove the dough from the oven, then preheat the oven to 350 degrees F.
  9. Score the top of the loaf if you wish (you don’t have to do this).
  10. Bake for 20-25 minutes. When it’s done, the bread loaf will sound hollow when you tap the top, and the top should be golden brown.
  11. Let cool on a wire rack.
  12. Slice into individual slices and enjoy!
