Banana Bread

This recipe makes 1 loaf, but it is easily doubled if you would like 2.

Ingredients

  • 1 1/3 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 cup butter or margarine
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed bananas (about 2 bananas)

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a bowl whisk together the flour, salt, baking soda and baking powder. Set aside.
  3. In a separate bowl, cream together the butter and sugar.
  4. Then beat the flour mix into the butter mix, until it has the consistency of brown sugar.
  5. Beat in the eggs one at a time.
  6. Fold in the mashed banana.
  7. Bake for about 45 minutes, or until a toothpick inserted into the centre of the loaf comes out clean.
