Banana Bran Muffins
These Banana Bran Muffins are hearty, healthy and so delicious! Full of fibre and a great recipe for your ripe bananas.

- 3 bananas, mashed
- 1/2 cup butter
- 1/2 cup brown sugar
- 2 eggs
- 1/4 cup milk
- 1/2 teaspoon vanilla
- 1 1/2 cups flour
- 1/2 cup wheat bran
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional)
- Preheat your oven to 375 degrees F.
- Line a muffin tin with 12 paper muffin liners.
- Mash 3 bananas. I put my bananas on a plate and use a fork to mash them. Set aside.
- In a bowl whisk together the flour, wheat bran, baking soda, baking powder, salt and cinnamon. Set aside.
- In a separate large mixing bowl cream together the butter and brown sugar until fluffy.
- Add in the mashed bananas, eggs, milk, and vanilla. Mix well.
- Then add the flour mixture and blend until just moistened.
- Scoop the muffin batter evenly between the 12 prepared muffin cups.
- Bake for 20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
- Let the muffins cool in the tin for about 5 minutes, then transfer them to a cooling rack to cool completely.
