This Asparagus and Goat Cheese Frittata is a perfect recipe for a spring brunch (or any breakfast or dinner)! Ready and on the table in less than 1 hour.

6 large eggs
1/2 cup milk
1/2 cup ricotta cheese
1/2 cup crumbled goat cheese
1/8 salt
1/8 tsp ground black pepper
2 green onions, sliced
2 cups asparagus (about 1 pound asparagus)
Preheat your oven to 350 degrees F.
Prepare the asparagus by washing, drying then trimming the tough ends off. Set aside.
In a large mixing bowl whisk together the eggs, milk, ricotta cheese, salt and pepper, until well combined.
Stir in the crumbled goat cheese and green onions.
Pour the egg mixture into an 9 inch oven safe dish.
Then lay the asparagus in a single layer into the mixture.
Bake uncovered for about 45 minutes, or until the centre of the frittata is firm.
Serve immediately.
