Green Chili & Cilantro Rice

Ingredients

  • 1125 mL can of green chilis
  • 1/2 cup chopped fresh cilantro
  • 1 clove garlic (chopped)
  • 3 tbsp olive oil
  • 2 cups cooked white or brown rice

Instructions

  1. Using a food processor, blend together the chilis, cilantro, garlic and olive oil until smooth.
  2. Add the chili mixture to the cooked rice and blend well. You may need to heat the spiced rice up, so you can either do this in the microwave for a few minutes, or on the stove top until it is heated thoroughly.
